Instructions

  1. Preheat the oven: Preheat your oven to 450°F (230°C) to ensure it's hot enough for roasting the peppers evenly.
  2. Prepare peppers: Wash the bell peppers thoroughly and dry them. Leave the peppers whole or cut them in halves or quarters, depending on your preference.
  3. Roast the peppers: Place the peppers on a baking sheet lined with foil or parchment paper. Roast them in the oven for about 20-25 minutes, turning occasionally, until the skins are charred and blistered on all sides.
  4. Steam and peel: Remove the peppers from the oven and immediately transfer them to a covered bowl or a sealed plastic bag to steam for about 10 minutes. This will make peeling the skins easier. After steaming, peel off the skins and remove seeds and membranes.
  5. Preserve in olive oil: Slice or leave the peppers whole and place them in a clean jar. Cover completely with olive oil to preserve and infuse the flavors. Store in the refrigerator and use within one to two weeks.
