Béchamel Sauce

Instructions

  1. Prepare the Eggplant: Slice the eggplants into 1/4-inch thick rounds. Lay them out on paper towels and sprinkle with salt to draw out moisture and bitterness. Let them sit for about 30 minutes, then pat dry with additional paper towels.
  2. Cook the Eggplant: In a large skillet, heat the olive oil over medium heat. Fry the eggplant slices in batches until golden and tender, about 3-4 minutes per side. Set aside on paper towels to drain excess oil.
  3. Make the Meat Sauce: In the same skillet, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute. Add the ground lamb or beef and cook until browned. Stir in the canned tomatoes and cinnamon stick. Simmer the sauce gently for 20-25 minutes until thickened. Remove the cinnamon stick and season with salt and pepper to taste.
  4. Prepare the Béchamel Sauce: In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 2 minutes to make a roux. Gradually whisk in the milk, ensuring a smooth sauce. Cook, stirring constantly, until the sauce thickens and coats the back of a spoon. Remove from heat and stir in the grated Parmesan cheese. Season with salt, pepper, and a pinch of nutmeg if desired.
