Ingredients

Roasted Sweet Potato

  • 1 large sweet potato
  • 2 tbsp olive oil
  • 1 tsp salt

  • 1.5 cups orzo/risoni pasta
  • 200g basil pesto (about ¾ - 1 cup)
  • ½ lemon, juiced

  • 4 cups rocket (arugula)

Instructions

  1. Roast the Sweet Potato: Preheat your oven to 400°F (200°C). Peel and dice the sweet potato into small cubes. Toss the cubes in olive oil, salt, and pepper until well coated. Spread the sweet potato evenly on a baking sheet and roast for approximately 25-30 minutes, turning halfway, until tender and golden brown.
  2. Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, until al dente. Drain the orzo and rinse briefly under cold water to stop the cooking process and cool it down for the salad.

  4. Combine Salad Ingredients: Add the cooked orzo to the bowl with the pesto dressing and toss to coat the pasta evenly.
