Instructions

  2. Add mushrooms, tomatoes, broth, and pasta to simmer: Stir in sliced mushrooms, crushed tomatoes, vegetable broth or water, penne pasta, and season with mineral salt and fresh cracked pepper. Bring the mixture to a boil, then cover, reduce heat to low, and let simmer gently for 15 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  3. Finish and garnish: Remove the pot from heat, stir in chopped parsley thoroughly, and adjust seasoning if needed. Serve immediately with extra parsley sprinkled on top and a light dusting of Almond Parmesan if desired.
