  • 1 pound Italian sausage
  • 1 pound ground beef (85/15)

Liquids and Sauces

  • 3 cups beef broth
  • 2 cups passata plus ½ cup water mixed in bottle
  • ½ cup heavy cream (at room temperature)

Seasonings and Herbs

  • 1 teaspoon sugar
  • 2 tablespoons Worcestershire sauce

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Chop the Veggies. Begin by finely chopping the onion, carrots, and celery stalks into uniform ⅛ to ¼ inch pieces to ensure even cooking. A mandolin slicer can help achieve consistent cuts.
  2. Saute the Vegetables. Heat the olive oil in a 5.5-quart Dutch oven over medium-low heat until slightly sizzling. Add the chopped onions, carrots, and celery, and sauté for 5 to 10 minutes, stirring occasionally until the vegetables are soft and cooked through. Remove from the pan and set aside.
  3. Brown the Meat. On low heat, add the ground beef and Italian sausage to the Dutch oven. Cook the meats, stirring occasionally, until they are browned and completely cooked through, about 10 minutes. Drain excess grease if desired.
  4. Return Vegetables to the Pot. Add the sautéed vegetables back into the Dutch oven with the browned meat, mixing together to combine.

  6. Simmer the Sauce. Cover the Dutch oven with a lid and let the sauce simmer on very low heat for 1 hour. Stir occasionally to prevent sticking. If the sauce thickens too much (like chili consistency), add additional beef broth (1 to 2 cups) as needed.
  7. Add the Pasta. Increase the heat to bring the sauce up to a gentle boil. Add the uncooked spaghetti noodles, breaking them in half if necessary to fit. Stir frequently to prevent noodles from sticking or burning. If the sauce seems thick, add water in ¼ cup increments. Cook until noodles are al dente, about 15 minutes.
  8. Add the Dairy. Stir in the heavy cream and freshly grated Parmesan cheese until the cheese melts and the sauce becomes creamy and rich. Immediately remove the pot from heat and discard the basil and thyme sprigs.
  9. Garnish and Serve. Serve the pasta immediately, garnished with fresh parsley and additional grated Parmesan cheese if desired.
