Instructions

  1. Prepare ingredients: Drain and rinse the canned chickpeas and white beans thoroughly. Chop the onion and mince the garlic cloves to have all ingredients ready for cooking.
  2. Sauté aromatics: Heat the extra virgin olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent and tender, approximately 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add spices and tomato paste: Stir in the Tuscan Marry Me blend and smoked paprika, allowing the spices to toast slightly with the aromatics. Then add the tomato paste and cook for 2-3 minutes to deepen its flavor.
  4. Incorporate tomatoes and liquids: Add the diced tomatoes, tomato sauce, and vegetable stock (if using) into the pot. Pour in the white cooking wine and stir everything together. Allow the mixture to simmer gently for about 10 minutes to meld the flavors.
  5. Add beans and cook: Stir in the drained chickpeas and white beans. Continue simmering for an additional 10 minutes to heat the beans through and thicken the sauce. Season with sea salt to taste.
  6. Add cheese and serve: Remove the pot from heat and stir in half of the shredded mozzarella cheese so it melts evenly into the beans. Sprinkle the remaining cheese on top, cover with a lid for a few minutes to let it melt, then serve warm.
