Ingredients

Dry Ingredients

  • 1¾ cup All-purpose Flour
  • ½ cup Cocoa Powder
  • ½ cup Light Brown Sugar
  • ¾ cup Sugar
  • ¾ tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 1 tsp Instant Coffee Powder

Wet Ingredients

  • 1 large Egg
  • ½ cup Vegetable Oil
  • ½ cup Milk
  • ¾ cup Yogurt or Milk
  • 1 tsp Vanilla Extract

Chocolate

  • ½ cup Dark Chocolate Chunks
  • ½ cup Milk Chocolate Chunks
  • 1 cup Dark Chocolate (for ganache)

Other

  • ¾ cup Heavy Cream (for ganache)

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 355℉ (180℃). Line muffin pans with paper liners to prevent sticking and for easy removal after baking.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together all the dry ingredients including flour, cocoa powder, light brown sugar, sugar, baking powder, baking soda, salt, and instant coffee powder. Sift the mixture to ensure even distribution and prevent clumps.
  3. Combine Wet Ingredients: In a separate bowl, mix the egg, vegetable oil, milk, yogurt (or extra milk if preferred), and vanilla extract until smooth and well blended.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients bowl. Whisk gently until the batter is smooth with no lumps, but avoid overmixing to keep the muffins tender.
  5. Add Chocolate Chunks: Fold in the dark and milk chocolate chunks carefully with a spatula to evenly distribute them in the batter.
  6. Fill Muffin Liners: Scoop the batter into the prepared muffin liners, filling them up completely. Sprinkle additional chocolate chunks on top of each muffin for extra chocolatey goodness.
  7. Bake Muffins: Place muffins in the preheated oven and bake for 20 minutes. Test doneness by inserting a wooden toothpick into the center; it should come out mostly clean with a few moist crumbs.
  8. Prepare Chocolate Ganache: While the muffins bake, heat the heavy cream in a saucepan over medium heat until small bubbles form around the edges. Remove from heat immediately.
  9. Melt Chocolate for Ganache: Add the cup of dark chocolate to the hot cream and let it sit undisturbed for 3 minutes. Then stir gently until the mixture is smooth and glossy.
  10. Cool and Thicken Ganache: Allow the ganache to cool and thicken before transferring it into a piping bag for easy filling.
  11. Fill Muffins with Ganache: Once the muffins have cooled, use a knife or chopstick to make a deep hole in the center of each muffin. Pipe the chocolate ganache into the hole until it just starts to overflow at the top.
  12. Serve and Enjoy: The muffins are now ready to be savored—decadent, chocolate-filled treats perfect for any occasion.

Notes

  • Do not overmix the batter to keep the muffins light and tender.
  • You can substitute yogurt with milk if preferred in the batter.
  • Ensure the ganache is thick enough before filling the muffins to prevent leakage.
  • For extra flavor, use espresso powder instead of instant coffee powder.
  • These muffins freeze well; store in an airtight container for up to 1 month.
