These Oatmeal Peanut Butter Balls are a delicious and nutritious no-bake snack, combining gluten-free oats, hemp seeds, flax meal, and natural peanut butter for a satisfying energy boost. Sweetened with pure maple syrup and flavored with optional cinnamon and vanilla, these easy-to-make bites are perfect for a quick treat or on-the-go snack.

Ingredients

Dry Ingredients

  • 1 3/4 cups gluten free rolled oats
  • 1/4 cup hulled hemp seeds
  • 1/4 cup flax meal
  • 2 tablespoons cacao nibs
  • 1/2 teaspoon ground cinnamon (optional)

Wet Ingredients

  • 1 cup organic natural creamy peanut butter
  • 1/4 cup + 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract (optional)

Instructions

  1. Combine Dry Ingredients: Place all the dry ingredients—gluten free rolled oats, hulled hemp seeds, flax meal, cacao nibs, and optional ground cinnamon—into a large mixing bowl and stir to mix evenly.
  2. Add Wet Ingredients: Add the peanut butter, pure maple syrup, and optional vanilla extract to the dry mixture. If your peanut butter is thick, warm it in the microwave for a few seconds until slightly runny to help with mixing.
  3. Mix Thoroughly: Stir the wet and dry ingredients together until a dough forms. The mixture should come together well and hold its shape when pressed.
  4. Form Balls: Using about 1 tablespoon of mixture at a time, roll or gently press into small balls. Repeat with all mixture until finished.
  5. Serve or Store: Enjoy the peanut butter balls immediately or store them in the refrigerator to keep fresh for later snacking.

Notes

  • Use warm peanut butter for easier mixing if it is too stiff.
  • To make the balls firmer, refrigerate them for at least 30 minutes before serving.
  • These balls can be stored in an airtight container in the fridge for up to 1 week.
  • For added texture and flavor, consider mixing in chopped nuts or dried fruit.
  • This recipe is naturally gluten free, vegan, and can be made paleo-friendly by using compliant nut butters and maple syrup.
