  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

  • 1 cup frozen raspberries (broken up into small pieces)

Instructions

  1. Combine butter and sugar: Add the softened butter and sugar to a mixing bowl or the bowl of a stand mixer.
  2. Cream together: Cream the butter and sugar for 1 minute until smooth and fluffy.
  3. Add wet ingredients: Add the egg, lemon juice, lemon zest, and vanilla extract to the butter and sugar mixture. Beat together until well combined, about 30 seconds. Optionally, hold off on adding lemon extract now.
  4. Add dry ingredients: Add the oat flour, cornstarch, baking soda, baking powder, and salt to the wet mixture. Beat together until a soft dough forms. Taste the dough and add more lemon zest or lemon extract if desired.
  5. Add raspberries: Gently fold in the broken frozen raspberries, mixing just until combined to avoid bleeding into the dough.
  6. Scoop dough: Use a 2-tablespoon scoop to place dollops of dough onto a baking sheet lined with parchment paper.
  7. Chill dough: Refrigerate the scooped dough for 1 hour to firm up and prevent excessive spreading during baking.
  8. Preheat oven: About 15-20 minutes before baking, preheat your oven to 350°F (175°C).
