This Best Nutella Stuffed Cookie Pie is a decadent dessert combining soft, chewy cookie dough with a gooey Nutella center. Perfect for sharing, this cookie pie boasts rich chocolate chips throughout, and a luscious Nutella filling that melts in your mouth. Ideal for Nutella lovers looking for an easy yet impressive treat.

Ingredients

For the Cookie Dough:

  • 1/2 tsp baking soda
  • 200g unsalted butter, softened to room temperature
  • 250g light brown sugar
  • 1 tsp vanilla extract (preferably Nielsen-Massey)
  • 320g plain flour
  • 200g chocolate chips
  • 1 large egg, at room temperature

For the Filling and Topping:

  • 350g to 400g Nutella
  • Additional chocolate chips, for topping

Instructions

  1. Preheat and Prepare: Preheat your oven to 180°C (350°F). Lightly grease or line a round baking pan to prevent sticking.
  2. Make the Cookie Dough: In a large mixing bowl, cream together the softened unsalted butter and light brown sugar until light and fluffy. Add the egg and vanilla extract, beating well to combine. In a separate bowl, whisk together the plain flour and baking soda, then gradually add to the wet ingredients. Mix until just combined. Fold in the chocolate chips evenly throughout the dough.
  3. Assemble the Cookie Pie: Divide the cookie dough into two portions. Press one half evenly into the base of the prepared baking pan, creating an even layer about 1-2 cm thick. Spread the Nutella evenly over this layer, leaving a small border around the edge to prevent leaking.
  4. Top with Remaining Dough: Take the remaining half of the cookie dough and gently spread it on top of the Nutella layer, covering it completely. Sprinkle additional chocolate chips on top if desired for extra texture and chocolate bursts.
  5. Bake: Place the cookie pie in the preheated oven and bake for 25-30 minutes or until the top is golden brown and cooked through. The center may still be slightly soft but will firm up as it cools.
  6. Cool and Serve: Allow the cookie pie to cool in the pan for at least 15 minutes to let the Nutella filling set. Slice into wedges and serve warm or at room temperature for the best gooey experience.

Notes

  • Ensure your butter and egg are at room temperature for easy mixing and better dough consistency.
  • Do not overbake; the cookie pie should be slightly soft in the center to maintain the Nutella's gooey texture.
  • Using a springform pan can help with easier removal of the cookie pie.
  • Store leftovers in an airtight container, and warm slices slightly before serving to soften the Nutella filling again.
  • You can substitute Nutella with any other hazelnut spread if preferred.
