Instructions

  1. Preheat Oven: Preheat your oven to 300 degrees Fahrenheit. Prepare a rimmed baking sheet by lining it with parchment paper or a silicone baking mat, or lightly grease it with coconut oil to prevent sticking.
  2. Combine Ingredients: In a medium-sized bowl, mix together the rolled oats, sunflower seeds, pepitas, hemp hearts, cinnamon, and salt. Pour the maple syrup, sunbutter or tahini (if using), and vanilla extract over the dry ingredients, then stir well until all oats and seeds are thoroughly coated and no dry spots remain.
  3. Spread Granola: Evenly spread the coated granola mixture in a single layer on the prepared baking sheet, ensuring it is distributed well for even baking.
  4. Bake: Place the baking sheet on the center rack of the oven and bake for 25 to 35 minutes. About halfway through baking, stir the granola to ensure even cooking. If using two baking sheets, swap their positions after stirring to promote uniform baking.
  5. Cool Down: Remove the granola from the oven and allow it to cool completely on the baking sheet. It will harden as it cools, giving that classic crunchy texture.
  6. Serve and Store: Once cooled, transfer the granola to an airtight container. This recipe yields approximately 6 cups, perfect for multiple servings or gifting.
