Cheesecake Filling

  • 1/3 cup maple syrup
  • 2-3 tsp freshly squeezed lemon juice
  • 1/8 heaped tsp sea salt
  • 1/2 cup dark chocolate chips, melted

Instructions

  1. Prepare Raspberry Compote (Optional): If serving with raspberry compote, prepare it first following your preferred recipe and set aside.

  3. Divide Crust: Evenly distribute about 2-3 tablespoons of the crushed cookie crumbs into approximately six 6-ounce jars or glasses. Rinse the blender if needed.
  4. Melt Chocolate: Melt the dark chocolate chips in a heat-proof bowl either in the microwave in 15-second intervals or using a double boiler method on the stovetop, stirring occasionally until fully melted (about 5 minutes).
