This No Bake Mint Chocolate Chip Pie is a refreshing and indulgent dessert that combines a crunchy mint Oreo crust with a creamy, mint-infused chocolate chip filling. Perfect for mint lovers, this easy-to-make pie requires no oven and uses whipped cream and cream cheese for a smooth, luscious texture with bursts of semi-sweet chocolate chips for added delight.

Ingredients

Crust

  • 18 Mint Oreos (about 2 cups crushed)
  • ¼ cup (57g) unsalted butter, melted

Filling

  • 1 cup (240mL) heavy cream (or heavy whipping cream)
  • 8 ounces (227g) full fat block cream cheese, softened to room temperature
  • 1 cup (120g) powdered sugar
  • 1 teaspoon vanilla extract
  • ¾ teaspoon peppermint extract
  • 6 to 8 drops green food coloring (optional)
  • 1½ cups (288g) mini semi-sweet chocolate chips, divided

Instructions

  1. Prepare the crust: Crush the 18 mint Oreos into fine crumbs using a food processor or by placing them in a plastic bag and crushing with a rolling pin. Combine the crushed Oreos with melted unsalted butter in a bowl until the mixture resembles wet sand.
  2. Press the crust: Firmly press the Oreo crust mixture into the bottom and slightly up the sides of a 9-inch pie pan to form an even crust layer. Refrigerate while preparing the filling to help it set.
  3. Whip the cream: In a clean mixing bowl, whip 1 cup of heavy cream with an electric mixer until stiff peaks form. Set aside for later folding into the filling.
  4. Make cream cheese mixture: In another bowl, beat the softened cream cheese with powdered sugar, vanilla extract, peppermint extract, and green food coloring (if using) until smooth and creamy.
  5. Combine fillings: Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream. Then fold in 1 cup of the mini semi-sweet chocolate chips evenly throughout the filling.
  6. Assemble the pie: Pour the filling into the prepared Oreo crust and spread it evenly with a spatula. Sprinkle the remaining ½ cup of mini chocolate chips on top for garnish.
  7. Chill the pie: Refrigerate the assembled pie for at least 4 hours, or overnight, to allow the filling to fully set and flavors to meld.
  8. Serve: Slice and serve chilled. Enjoy your refreshing no bake mint chocolate chip pie!

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth filling without lumps.
  • You can substitute the mint Oreos with regular Oreos and add extra peppermint extract for a stronger mint flavor.
  • Green food coloring is optional but gives the pie a classic mint chocolate chip appearance.
  • For easier crust pressing, use the back of a measuring cup or glass to compact the crumbs evenly.
  • Store any leftovers covered in the refrigerator for up to 3 days to maintain freshness.
