Perfectly portioned and ready in under two hours, these bite-sized desserts offer a delicious twist on classic cheesecakes without the need for baking.

Ingredients

Pretzel Crust

  • 1.5 cups pretzels
  • 4 tbsp melted butter
  • 2 tbsp brown sugar

Cheesecake Layer

  • 2.5 cups full fat cottage cheese
  • 1/4 cup peanut butter powder
  • 1/4 cup real maple syrup

Chocolate Topping

  • 2/3 cup chocolate chips (dark or milk chocolate)
  • 1 tbsp butter
  • Flaky sea salt, for sprinkling

Instructions

  1. Prepare Pretzel Crust: Place pretzels, melted butter, and brown sugar into a food processor and pulse until the mixture turns crumbly. Evenly press about 2 tablespoons of this mixture into each silicone muffin cup to form the crust. Transfer the mold to the freezer for approximately 10 minutes to allow the crust to set initially.
  2. Make Cheesecake Layer: In a mixing bowl, whip together the full fat cottage cheese, peanut butter powder, and maple syrup until the mixture is smooth and fluffy. Spoon two heaping tablespoons of this cheesecake filling over each pretzel crust in the mold. Return the mold to the freezer and let it chill and set for 1 to 2 hours.
  3. Prepare Chocolate Topping: Melt the chocolate chips together with 1 tablespoon of butter until smooth, either using a microwave or a double boiler. Drizzle or spoon the melted chocolate evenly over each cheesecake cup, then sprinkle with flaky sea salt to enhance the flavors. Place the mold back in the freezer for another 10 minutes to let the chocolate topping set firmly.
  4. Serve: Before serving, allow the mini cheesecakes to sit at room temperature for 10 to 15 minutes to soften slightly, as they will be quite frozen and firm directly from the freezer.

Notes

  • Use full fat cottage cheese for the creamiest texture and best flavor.
  • Peanut butter powder adds flavor without excess fat; ensure it’s well mixed for smoothness.
  • Adjust the amount of maple syrup based on your preferred sweetness.
  • For dairy-free alternative, substitute ingredients accordingly, though texture may vary.
  • The chocolate topping can be customized with white chocolate or flavored chips.
  • Silicone muffin molds make removal easy and help the shape hold better after freezing.
