This No Bake Dulce de Leche Cheesecake is a creamy, luscious dessert featuring a buttery graham cracker crust and a rich dulce de leche cream cheese filling. Perfectly chilled to set without the need for baking, it’s an irresistible treat topped with dollops of caramel-like dulce de leche and a sprinkle of flaky salt for a delightful balance of flavors.

Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 2 tablespoons sugar

Filling

  • 24 oz (3 packages) cream cheese, softened
  • 1 1/4 cups dulce de leche
  • 3 cups Cool Whip (1L container), chilled
  • 3/4 cup icing sugar (confectioners sugar or powdered sugar)
  • 1 teaspoon vanilla extract

Toppings (Optional)

  • 1/2 cup dulce de leche (for decorating)
  • Flaky salt (for sprinkling)

Instructions

  1. Prepare the crust: Line the bottom of a 9-inch springform pan with parchment paper. In a large bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated with butter.
  2. Press the crust: Press the graham crumb mixture evenly into the bottom of the prepared pan, forming a compact crust layer. Place the pan in the refrigerator to chill while preparing the filling.
  3. Make the cream cheese filling: Using a hand mixer or stand mixer, beat the softened cream cheese until light and fluffy. Gradually add the dulce de leche, Cool Whip, icing sugar, and vanilla extract. Continue mixing until the mixture is smooth and well combined.
  4. Assemble the cheesecake: Spread the cream cheese mixture evenly over the chilled graham cracker crust in the springform pan.
  5. Chill to set: Place the assembled cheesecake into the refrigerator and chill for 3 to 4 hours until firm and set.
  6. Decorate (optional): Before serving, decorate the cheesecake by placing dollops of dulce de leche along the border and sprinkling flaky salt over the top. Alternatively, drizzle or spread additional dulce de leche over the surface for extra sweetness.

Notes

  • Ensure cream cheese is softened to room temperature for smooth mixing.
  • Chilling the crust before adding filling helps it set firmly.
  • You can substitute Cool Whip with homemade whipped cream if preferred.
  • The flaky salt enhances the sweetness of the dulce de leche and balances flavors.
  • For best texture, avoid freezing the cheesecake.
  • Use a 9-inch springform pan for easy removal and shaping.
