Instructions

  1. Prepare Pan: Line an 8x8 inch pan with parchment paper to ensure easy removal of the bars once set.
  2. Mix Dry and Wet Ingredients: In a large mixing bowl, combine rolled oats and vanilla protein powder. Add honey, ½ cup peanut butter, and vanilla extract, then use a handheld mixer to mix until the mixture is uniform and sticky.
  3. Form Bottom Layer: Press half of the oat mixture evenly into the prepared pan to create the base layer of the bars.
  4. Melt Chocolate Filling: In a microwave-safe bowl, gently melt the dark chocolate chips together with ¼ cup peanut butter until smooth and well combined, stirring every 20 seconds to avoid burning.
  5. Assemble Bars: Pour the melted chocolate and peanut butter mixture over the pressed oat base layer, spreading evenly.
