1 head of napa cabbage, cleaned, trimmed, and shredded (about 10 cups)
1 bunch of green onions, finely chopped
4 cups shredded rotisserie chicken
1 cup of cashews
1 cup of something crunchy – fried wonton strips, crispy fried onions, or crushed-up dry ramen noodles
1 tablespoon of sesame seeds (optional)
Dressing
1/2 cup + 2 tablespoons vegetable oil or avocado oil
1/2 cup maple syrup or granulated sugar
3 tablespoons apple cider vinegar
2 tablespoons soy sauce
2 tablespoons sesame oil (to taste)
Salt to taste
Instructions
Prepare the Cabbage Mixture: Toss the shredded napa cabbage with the finely chopped green onions in a large bowl. This mixture can be stored in an airtight container in the refrigerator for several days if not serving immediately.
Make the Dressing: In a jar or a bowl with a tight-fitting lid, combine the vegetable or avocado oil, maple syrup or sugar, apple cider vinegar, soy sauce, sesame oil, and salt. Shake or whisk well until thoroughly blended.
Assemble the Salad: When ready to serve, add the shredded rotisserie chicken, cashews, and crunchy wonton strips (or your choice of crunchy topping) to the cabbage mixture. Pour enough sesame dressing over the salad to generously coat all ingredients. Toss gently to combine.
