  • ¾ cup olive oil, plus extra for brushing

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and prepare a 9-inch round cake pan by lining it with parchment paper. Brush the bottom and sides of the pan generously with olive oil to prevent sticking.
  2. Mix wet ingredients: In a large bowl, combine the granulated sugar, olive oil, eggs, Greek yogurt, lemon juice, lemon zest, and vanilla extract. Whisk these together until you achieve a smooth, well-integrated mixture.
  3. Sift and combine dry ingredients: Place a fine mesh sieve over the bowl containing the wet ingredients and sift in the all-purpose flour, baking powder, baking soda, and salt. Gently whisk everything together until just combined, being careful not to overmix.
  4. Prepare batter in the pan: Pour the cake batter into your prepared cake pan and smooth the surface evenly with an offset spatula.
