Ingredients

Crust

  • 200 g Digestive biscuits or equivalent
  • 120 g butter, melted

Cheesecake Filling

  • 600 g cream cheese
  • 70 g icing sugar
  • 12 g gelatin sheets
  • 300 ml cream

Jello Cubes

  • 2 jello packets (colorful or colorless)
  • 500 ml water (to prepare jello + extra water for blooming gelatin)
  • Food colouring (optional – if using colourless jello)

Instructions

  1. Prepare Jello Cubes: Dissolve the jello packets in 500 ml boiling water according to package instructions. If using colorless jello and coloring desired, add food coloring now. Pour into shallow containers and refrigerate until fully set. Once set, cut into small cubes and set aside.
  2. Make the Crust: Crush the digestive biscuits finely and mix well with melted butter until combined. Press this mixture firmly into the base of a springform pan to form an even crust. Chill in the refrigerator while preparing the filling.
  3. Soften Gelatin: Soak the gelatin sheets in cold water for about 5-10 minutes until softened.
  4. Prepare Cheesecake Filling: In a large bowl, beat cream cheese and icing sugar until smooth and creamy. Warm a small portion of the cream and dissolve the softened gelatin sheets in it. Stir this gelatin mixture back into the cream cheese mixture. Whip the remaining cream until soft peaks form and gently fold it into the cream cheese mixture, ensuring a smooth and airy texture.
  5. Assemble the Mosaic Cheesecake: Gently fold the jello cubes into the cheesecake filling, spreading evenly throughout. Pour the mixture over the chilled biscuit crust, smoothing the top with a spatula.
  6. Chill to Set: Refrigerate the cheesecake for at least 4-6 hours or preferably overnight until completely set and firm.
  7. Serve: Once set, remove from the springform pan, slice, and serve chilled for a colorful and creamy dessert experience.
