Perfect for a quick weeknight dinner that packs bold flavors and comforting textures.

Ingredients

Noodles

  • 8 ounces noodles (lo mein or ramen)

Beef Mixture

  • 1 pound lean ground beef
  • 1 tablespoon avocado oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • ¼ cup low sodium soy sauce
  • ¼ cup hoisin sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon oyster sauce
  • ½ teaspoon red pepper flakes (optional)

Thickener and Garnish

  • 2 teaspoons cornstarch
  • 2 tablespoons water (for slurry)
  • 3 green onions, sliced plus extra for garnish
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Cook the noodles: Prepare the noodles according to the package instructions until al dente. Drain and set aside.
  2. Sauté aromatics: Heat avocado oil in a large skillet over medium-high heat. Add minced garlic and ginger, cooking for 1-2 minutes until fragrant but not browned.
  3. Cook ground beef: Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Drain excess fat if necessary.
  4. Add sauces and seasoning: Stir in soy sauce, hoisin sauce, brown sugar, oyster sauce, and red pepper flakes if using. Mix well to coat the beef evenly.
  5. Thicken the sauce: In a small bowl, combine cornstarch and water to create a slurry. Pour the slurry into the skillet and stir continuously until the sauce thickens, about 1-2 minutes.
  6. Combine noodles and beef mixture: Add the cooked noodles and sliced green onions to the skillet. Toss everything together until the noodles are well coated with the sauce and heated through.
  7. Garnish and serve: Transfer the Mongolian beef noodles to a serving dish. Sprinkle with additional green onions and sesame seeds for garnish. Serve immediately.

Notes

  • Use lean ground beef to reduce excess grease.
  • Adjust red pepper flakes to control heat level.
  • Substitute oyster sauce with mushroom sauce for a vegetarian alternative, though this recipe includes meat.
  • For gluten-free, use tamari instead of soy sauce and gluten-free noodles.
  • Ensure not to overcook noodles to maintain chewy texture.
