Instructions

  1. Make the broth: Place the thinly sliced onions, water, and powdered dashi into a pot. Bring the mixture to a boil over medium-high heat.
  2. Simmer the onions: Once boiling, reduce the heat to low, cover the pot, and let it cook for 10-12 minutes until the onions are tender and flavorful.
  3. Add the miso paste: Put the miso paste into a small strainer and lower the strainer into the pot so the liquid covers the paste. Use chopsticks to gently stir and dissolve the miso fully into the broth without letting it boil.
  4. Serve the soup: Turn off the heat and ladle the soup into bowls.
  5. Add heat (optional): Sprinkle a pinch of ichimi togarashi on top for a subtle spicy kick before serving.

  • Do not let the soup boil after adding miso, as boiling can affect the flavor and nutritional benefits of the miso paste.
