This Miso Salmon recipe features tender, flaky salmon fillets marinated in a flavorful mixture of white miso, soy sauce, honey, lime, ginger, garlic, and sesame oil. Broiled to perfection, the salmon develops a beautiful caramelized finish while staying juicy inside. Ready in just 20 minutes, it's an easy and elegant weeknight dinner serving four.

Ingredients

Salmon

  • 4 (6 oz each) skinless salmon fillets (about 3/4-inch thick)

Marinade

  • 3 Tbsp white miso paste (Trader Joe's recommended for moderate saltiness)
  • 1 Tbsp soy sauce or tamari
  • 1 1/2 Tbsp honey
  • 1 Tbsp avocado oil or peanut oil
  • 1 Tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 tsp finely grated ginger
  • 1 tsp finely minced garlic
  • 1/2 tsp toasted sesame oil

Optional Garnish

  • 2 Tbsp sliced green onions

Instructions

  1. Prepare Salmon: Place the salmon fillets in a resealable gallon-size bag, ready for marinating.
  2. Make Marinade: In a small bowl, whisk together the white miso paste, soy sauce, honey, avocado oil, fresh lime juice, lime zest, grated ginger, minced garlic, and toasted sesame oil until smooth and combined.
  3. Marinate Salmon: Set aside 1 1/2 tablespoons of the marinade in the refrigerator for later use. Pour the remaining marinade over the salmon fillets inside the bag, turning them to ensure even coating. Seal the bag, pressing out excess air, and refrigerate for 30 to 60 minutes to infuse flavors.
  4. Preheat Broiler: Adjust the oven rack about 7 inches from the broiler element and preheat the broiler on high for 3 minutes to get it properly hot.
  5. Prepare Baking Sheet: Lightly spray a medium baking sheet with non-stick cooking spray. Remove the chilled reserved marinade from the fridge to take the chill off. Take the salmon out from the bag and place the fillets on the baking sheet, leaving excess marinade behind in the bag.
  6. Broil Salmon: Broil the salmon for 5 to 6 minutes until cooked through to your liking. If the salmon starts to over-brown, tent loosely with foil to prevent burning while finishing cooking.
  7. Finish & Serve: Remove the salmon from the oven and brush the reserved 1 1/2 tablespoons of marinade over the fillets for extra flavor. Garnish with sliced green onions if desired, then serve immediately.

Notes

  • Do not marinate the salmon for longer than 1 hour as the miso can overpower the fish and affect texture.
  • Broiling time may vary depending on your oven and thickness of fillets; check for doneness by flaking with a fork.
  • Tenting with foil helps prevent excessive browning while ensuring the fish cooks evenly.
  • For a gluten-free version, use tamari instead of soy sauce.
  • Adjust sweetness or saltiness by modifying honey or soy sauce amounts to taste.
