Ingredients

Crust

  • 1 8-oz. package crescent rolls (Pillsbury recommended)

Egg White Mixture

  • 2.5 cups egg whites (600g)
  • 1 Tbsp Italian seasoning
  • 1 tsp salt

Toppings

  • 1/2 cup shredded 2% mozzarella cheese (56g)
  • 1/2 cup fat free feta cheese (56g)
  • 3 Tbsp sun-dried tomatoes in oil (45g), such as California brand
  • 1/4 cup diced red onions (30g)
  • 1.5 cups fresh baby spinach, torn (42g)

Instructions

  1. Prepare the crust: Preheat your oven to 375°F (190°C). Unroll the crescent rolls onto a baking sheet lined with parchment paper and press the seams together to form a solid crust base.
  2. Mix egg whites: In a bowl, whisk together the egg whites, Italian seasoning, and salt until well combined and slightly frothy.
  3. Pre-bake the crust: Bake the crescent roll crust in the preheated oven for about 7-8 minutes or until it starts to turn golden but is not fully cooked through.
  4. Add toppings: Remove the crust from the oven and evenly pour the egg white mixture over it. Then sprinkle shredded mozzarella, fat-free feta cheese, sun-dried tomatoes, diced red onions, and torn baby spinach evenly on top.
  5. Bake the pizza: Return the topped pizza to the oven and bake for an additional 15-18 minutes, or until the egg whites are fully set and the cheese is melted and slightly golden.
  6. Serve: Let the pizza cool for a few minutes before slicing. Enjoy this healthy Mediterranean-inspired meal warm for breakfast, brunch, or a light meal.

Notes

  • For a crispier crust, bake the crescent roll base a few minutes longer before adding toppings.
  • Sun-dried tomatoes packed in oil add richness; drain slightly if you want less oil on the pizza.
  • This recipe can be customized by adding other Mediterranean toppings like olives or artichoke hearts.
  • Use fresh spinach as it wilts nicely; frozen spinach is not recommended.
  • Perfect for meal prepping—store leftovers in the fridge and reheat gently.
