  • 1 teaspoon dried oregano
  • Lemon wedges (for serving)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the fish evenly and thoroughly.
  2. Prepare the marinade: In a small bowl, combine the olive oil, lemon zest and juice, minced garlic, dried oregano, salt, and black pepper. Mix well to blend the flavors.
  3. Marinate the fish: Place the fish fillets in a baking dish and brush both sides generously with the lemon-garlic marinade. Let the fish absorb the flavors for about 10-15 minutes at room temperature.
  4. Arrange the vegetables: Scatter the sliced onion, bell pepper, zucchini, and halved cherry tomatoes around and on top of the fish in the baking dish. Drizzle any remaining marinade over the vegetables.
  5. Bake the fish and vegetables: Place the baking dish in the preheated oven and bake for 20-25 minutes or until the fish flakes easily with a fork and the vegetables are tender.
