Sauce

  • 1 large shallot, minced
  • 3 large cloves garlic, minced or pressed

  • ¼ teaspoon red pepper flakes
  • 2 teaspoons tomato paste
  • 1 cup chicken stock
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes in oil, drained well and chopped
  • ¼ cup grated Parmesan cheese
  • 3 cups baby spinach
  • ¼ cup fresh basil, roughly chopped

Instructions

  1. Season and Brown the Chicken: Season both sides of the chicken breasts with kosher salt and freshly ground black pepper. In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of extra-virgin olive oil over medium-high heat. Add the chicken cutlets in a single layer and cook for 3 minutes on each side until golden brown. Remove the chicken from the skillet and set aside on a large plate; the chicken will finish cooking later in the sauce.
  2. Prepare the Sauce Base: Reduce the skillet heat to medium and add the remaining tablespoon of butter. Add the minced shallot, garlic, Italian seasoning, and red pepper flakes. Sauté for about 1 minute, stirring frequently to prevent the garlic from burning. Add the tomato paste and stir for another minute to deepen the flavor.
  3. Deglaze and Simmer the Sauce: Pour in the chicken stock to deglaze the skillet, scraping up any browned bits from the bottom for extra flavor. Stir in the heavy cream, chopped sun-dried tomatoes, and grated Parmesan cheese. Allow the sauce to simmer gently for 3 to 4 minutes, stirring occasionally, so it reduces and thickens slightly.
  4. Add Spinach and Return Chicken: Stir the baby spinach into the sauce until it begins to wilt. Nestle the browned chicken breasts back into the skillet within the sauce. Reduce heat to medium-low, cover, and cook for 4 minutes or until the chicken reaches an internal temperature of 165°F (74°C) using an instant-read thermometer.
  5. Finish and Serve: Remove from heat and sprinkle the dish with freshly chopped basil and extra Parmesan cheese if desired. Taste the sauce and adjust seasoning with additional salt or red pepper flakes according to preference. Serve the warm, creamy chicken immediately.
