Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the chicken later in the process.
  2. Heat Skillet: Heat a large, ovenproof skillet over medium-high heat and add the olive oil to coat the pan evenly.
  3. Season Chicken: Season the chicken breast halves with salt and black pepper on both sides for balanced flavor.
  4. Sear Chicken: Place the chicken in the hot skillet and cook for 2 minutes on each side until browned and sealed, giving the chicken a nice crust.
  5. Remove Chicken: Take the chicken out of the pan and set aside to prepare the sauce in the same skillet.
  6. Make Sauce Base: Add chicken broth, maple syrup, half of the chopped thyme (1 teaspoon), and minced garlic to the skillet. Bring the mixture to a boil, scraping the pan to loosen the browned bits for extra flavor.
  7. Simmer Sauce: Cook the sauce for 2 minutes while stirring frequently to blend the flavors and slightly reduce the liquid.
  8. Add Vinegar and Mustard: Stir in the cider vinegar and stone-ground mustard, cooking for another 1 minute while stirring constantly to thicken the glaze.
  9. Return Chicken: Place the chicken back into the skillet along with any accumulated juices, spooning the sauce over the top to coat the chicken well.
