A refreshing and vibrant Mango Slaw combining shredded purple cabbage, juicy mangos, fresh cilantro, and a zesty citrus dressing. Perfect as a side dish for summer meals or a light, healthy snack.

Ingredients

Slaw Base

  • 3 cups shredded purple cabbage (or use a slaw mix with carrots)
  • 1-2 firm mangos (about 2 cups shredded), chilled before shredding
  • ½ cup cilantro, chopped (thin stems are okay)
  • ¼ cup thinly sliced red onion (or substitute with green onions)
  • ½ to 1 jalapeno, finely minced (optional)

Dressing and Seasoning

  • 1 orange - 1 tablespoon zest and ¼ cup orange juice
  • 1 lime - 1 teaspoon lime zest and 1-2 tablespoons lime juice (more to taste)
  • ½ teaspoon salt (more to taste)

Instructions

  1. Prepare Mangos: Use cold, firm mangos for the best texture. Peel the mangos with a vegetable peeler and shred, grate, or slice into thin strips. Place the shredded mango into a large bowl.
  2. Combine Vegetables: Shred or thinly slice the purple cabbage and add it to the bowl with the mango. Add the chopped cilantro, sliced red onion, and minced jalapeno if using.
  3. Add Zests: Add the orange zest and lime zest to the slaw mixture. At this point, you can refrigerate the mixture until you are ready to serve.
  4. Mix Dressing: Just before serving, pour in the orange juice, lime juice, and add salt. Toss the slaw thoroughly to combine all the flavors.
  5. Taste and Adjust: Taste the slaw and adjust salt, spice level from the jalapeno, and lime juice to your preference.

  • Using cold, firm mangos helps maintain texture and prevents the slaw from becoming mushy.
  • You can substitute green onions if red onions are not available.
  • Adjust the jalapeno quantity based on your preferred spice level or omit it for a milder slaw.
