Mango Sago is a luscious and refreshing dessert perfect for warm weather, featuring chewy tapioca pearls combined with cubes of fresh mango and creamy mango coconut sauce. This tropical treat is often topped with coconut and mango jelly for added texture and delightful flavor contrast.

Ingredients

Toppings

  • ¾ cup small tapioca pearls (sago)
  • 1 mango, cubed
  • 1 cup coconut jelly (optional)
  • 1 cup mango jelly (optional)

Mango Coconut Sauce

  • 2-3 large mangos (~2 lbs), peeled and diced
  • ½ cup evaporated milk, chilled
  • 3 tablespoons condensed milk (adjust to taste)
  • 1 cup full-fat coconut milk

Instructions

  1. Cook the Sago: Rinse the small tapioca pearls under cold running water until clear. Bring a large pot of water to a boil, then add the sago. Cook for about 10-15 minutes, stirring occasionally, until the pearls turn translucent with only a small white dot in the center. Remove from heat and let stand for 20 minutes to fully cook.
  2. Drain and Rinse: Drain the cooked sago in a fine mesh sieve and rinse under cold water to stop cooking and remove excess starch. Set aside to cool completely.
  3. Prepare Mango Coconut Sauce: In a blender or food processor, add diced mangos, evaporated milk, condensed milk, and coconut milk. Blend until smooth and creamy. Adjust sweetness by adding more condensed milk if desired.
  4. Combine Sago and Sauce: Transfer the cooled sago pearls into a large mixing bowl and pour the mango coconut sauce over them. Mix gently until well combined.
  5. Assemble the Dessert: Spoon the mango sago mixture into serving bowls or glasses. Top with fresh cubed mango, coconut jelly, and mango jelly as desired for added texture and flavor contrast.
  6. Chill and Serve: Refrigerate the dessert for at least 30 minutes to chill before serving. Enjoy this refreshing mango sago treat cold.

Notes

  • Cooking times can vary depending on tapioca pearl size; check pearls for translucency to ensure doneness.
  • Condensed milk sweetness can be adjusted to taste; start with less and add more if needed.
  • Optional jellies add a fun texture and enhance the tropical flavor but can be omitted.
  • This dessert is best served chilled and consumed within 24 hours for maximum freshness.
  • Use ripe, sweet mangoes for the best flavor.
