This refreshing Mango Pico de Gallo is a vibrant twist on the classic Mexican salsa, combining juicy mangoes, ripe tomatoes, and spicy jalapeños with zesty lime juice and fresh cilantro. Perfect as a topping, dip, or side dish, it delivers a delightful balance of sweet, tangy, and spicy flavors that brighten any meal.

Ingredients

Produce

  • 1/2 small red or white onion, finely chopped
  • 2 jalapeño peppers, seeds removed, finely diced
  • 4-5 large Roma tomatoes or vine tomatoes, diced
  • 2 large ripe but not mushy mangoes, peeled and diced
  • 1/2 cup finely chopped cilantro, leaves and tender stems

Other

  • 1/4 cup lime juice (from about 1 1/2 limes)
  • 1 teaspoon kosher salt (such as Diamond Crystal)

Instructions

  1. Prepare the vegetables and fruit: Finely chop the red or white onion and remove seeds from the jalapeño peppers before dicing them. Dice the Roma or vine tomatoes and peel and dice the ripe mangoes. Chop the cilantro leaves and tender stems finely.
  2. Combine ingredients: In a large mixing bowl, combine the chopped onion, jalapeños, tomatoes, mangoes, and cilantro. Stir gently to mix all the fresh ingredients evenly.
  3. Add lime juice and salt: Pour in the freshly squeezed lime juice and sprinkle the kosher salt over the mixture. Stir thoroughly to incorporate the flavors throughout the pico de gallo.
  4. Rest and chill: Let the Mango Pico de Gallo rest for at least 10-15 minutes in the refrigerator to allow the flavors to meld and develop their vibrant character.
  5. Serve: Serve chilled or at room temperature as a topping for tacos, grilled meats, or as a refreshing dip with tortilla chips.

Notes

  • Adjust the amount of jalapeño to control heat level.
  • Use ripe but firm mangoes to ensure the pico de gallo has a nice texture without becoming mushy.
  • For a more intense flavor, let the mixture rest for up to an hour before serving.
  • Substitute lime juice with lemon juice if needed, although the flavor will slightly differ.
