  • 4 roma tomatoes
  • 2 cups fresh mango (large slices, skin and seed removed)
  • 2-3 habanero peppers (deveined and deseeded)
  • 1/2 yellow onion (peeled and quartered)
  • 2 cloves garlic (peeled)
  • 1/2 cup fresh cilantro

  • 3 Tbsp lime juice

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit and line a rimmed baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Ingredients for Roasting: Arrange the roma tomatoes, mango slices, habanero peppers, and quartered yellow onion on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt, then toss to coat evenly.
  3. Roast the Ingredients: Place the baking sheet in the preheated oven and roast the ingredients for 30 minutes, allowing them to soften and develop deep, caramelized flavors.
  4. Blend the Salsa: Transfer the roasted ingredients along with the peeled garlic cloves and fresh cilantro into a blender or food processor. Add lime juice and blend until you reach your desired consistency—smooth or slightly chunky.
