Instructions

  1. Prepare the Batter. In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until evenly combined.
  2. Melt the Butter. In a 9x13 inch baking dish, melt the ½ cup (1 stick) of unsalted butter in the oven or microwave until fully melted and hot.
  3. Add Batter to Butter. Pour the dry ingredients mixture over the melted butter in the dish, spreading evenly but do not stir.
  4. Pour the Liquid Ingredients. In a separate bowl, combine the buttermilk, vanilla extract, and lemon extract if using. Pour this liquid mixture evenly over the flour mixture in the baking dish without stirring. The batter will appear thin and liquidy.
  5. Add Lemon Filling. Spoon the 21 oz of lemon pie filling or lemon curd evenly over the top of the batter, dropping dollops gently across the surface without mixing in.
