Instructions

  1. Prepare Gelatin: Soak the 4 gelatin sheets in cold water for about 5-10 minutes until softened to help dissolve later in the lychee syrup mixture.
  2. Make Lychee Mixture: Drain the canned lychees, reserving the syrup. Blend the lychee fruit until smooth. Warm the syrup gently over low heat, add the sugar until dissolved, then remove from heat and stir in the softened gelatin sheets until fully melted.
  3. Combine Lychee and Gelatin Mix: Mix the pureed lychee with the gelatin syrup mixture thoroughly and allow to cool to room temperature.
  4. Whip Cream: Whip the cream until soft peaks form, ensuring it is smooth and airy.
  5. Fold Cream into Lychee Mixture: Gently fold the whipped cream into the cooled lychee gelatin mixture to create a smooth and fluffy filling.
  6. Assemble Cake: Place the Italian sponge cake as the base layer on your serving plate. Arrange a layer of pink Champagne biscuits around or on top as desired.
  7. Add Filling: Spread the lychee cream filling evenly over the sponge and biscuit layers.
  8. Chill: Refrigerate the assembled cake for at least 4-6 hours or until the filling is set and firm.
