Loaded Greek Feta Fries are crispy, golden fries topped with tangy crumbled feta cheese, fresh tomatoes, red onions, and a squeeze of lemon juice, finished with a sprinkle of oregano and parsley. This vibrant and flavorful dish captures the essence of Greek ingredients, perfect as a snack or a side dish.

Ingredients

Fries

  • 4 medium russet potatoes (can also substitute Yukon Gold potatoes)
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • Oil for frying (if using frying method)

Toppings

  • 3/4 cup feta cheese, crumbled
  • 1 large tomato, chopped
  • 1 small red onion, chopped (or 1/2 a large onion)
  • 1/2 lemon, juiced
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Potatoes: Wash and peel the potatoes if preferred, then cut them into fries or wedges of your desired thickness to ensure even cooking.
  2. Cook the Fries: You can either fry the potatoes in oil heated to 350°F until golden and crispy or toss them with olive oil, salt, pepper, and oregano and bake them in a preheated oven at 425°F for 25-30 minutes, turning halfway through.
  3. Make the Toppings: While the fries are cooking, crumble the feta cheese and chop the tomato and red onion into small pieces.
  4. Mix the Salsa: In a small bowl, combine the chopped tomatoes, onions, and the juice of half a lemon. Stir well to blend the flavors.
  5. Assemble the Loaded Fries: Once the fries are cooked and crispy, transfer them to a serving dish. Sprinkle the crumbled feta evenly over the fries, then top with the tomato and onion mixture.
  6. Garnish and Serve: Optionally, sprinkle fresh parsley on top for added freshness and serve immediately while the fries are warm and flavorful.

Notes

  • You can substitute russet potatoes with Yukon Gold for a creamier texture.
  • For a healthier version, baking the fries is preferable instead of frying.
  • Adjust salt according to the saltiness of the feta cheese.
  • Fresh lemon juice adds brightness but can be omitted if unavailable.
  • Serve immediately to maintain crispiness of the fries.
