Ingredients

Vegetables

  • 2 cups brussels sprouts, halved if large
  • 4 large carrots, peeled and large dice
  • 1 onion, large dice
  • 1 red bell pepper, large dice
  • 4 garlic cloves, thinly sliced
  • 23 handfuls greens (spinach, arugula, mixed greens)

Protein

  • 1 package chicken sausage, cut into 1-inch pieces

Seasonings & Extras

  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon thyme
  • Juice of half a lemon

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it reaches the ideal temperature for roasting the vegetables and sausage evenly.
  2. Prepare the veggies and sausage: In a large bowl, combine the halved brussels sprouts, diced carrots, onion, red bell pepper, and sliced garlic. Add the chicken sausage pieces on top of the vegetables.
  3. Season and oil everything: Drizzle the olive oil over the vegetables and sausage. Sprinkle with salt, pepper, garlic powder, paprika, and thyme. Toss everything gently together to coat all ingredients evenly with the oil and seasonings.
  4. Arrange on sheet pan: Spread the mixture out in a single layer on a large rimmed baking sheet, making sure the sausage pieces are not crowded to allow for even roasting.
  5. Roast in the oven: Place the sheet pan in the preheated oven and roast for 25-30 minutes, stirring halfway through to promote even cooking and browning. The vegetables should be tender and caramelized, and the sausage cooked through.
  6. Add fresh greens and lemon juice: Once roasted, remove from the oven and immediately toss with the fresh greens and juice of half a lemon. The residual heat will slightly wilt the greens, adding freshness and brightness.
  7. Serve: Serve warm straight from the pan for an easy, healthy, and flavorful dinner that combines protein, vegetables, and a zesty lemon finish.

Notes

  • Use any variety of greens you prefer for added freshness and nutrition.
  • Chicken sausage can be substituted with turkey sausage or your favorite sausage type.
  • For extra crispiness, broil for the last 2-3 minutes but watch closely to avoid burning.
  • Make sure not to overcrowd the pan to allow vegetables to roast instead of steam.
  • Leftovers store well in an airtight container in the refrigerator for up to 3 days.
