  • 1 - 2 Tbsp lemon zest (depending on how lemony you want them)
  • 1/4 cup (60ml) fresh lemon juice
  • 1 Tbsp (14g) butter, melted

Instructions

  1. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk these together to ensure they are evenly mixed.
  2. Prepare Wet Ingredients: In a separate bowl, whisk together the milk, ricotta cheese, eggs, vanilla extract, lemon zest, lemon juice, and melted butter until smooth and well combined.
  3. Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently stir with a spatula until just combined. Avoid overmixing to keep the batter light and fluffy; some lumps are fine.
