Lemon Meltaway Cookies are delicate, buttery cookies with a hint of cinnamon and bright lemon zest, rolled in powdered sugar for a melt-in-your-mouth finish. Perfect as a light, flavorful treat for tea time or dessert.

Ingredients

Cookie Dough

  • 250 g unsalted butter, softened at room temperature
  • ½ cup powdered sugar
  • ½ teaspoon cinnamon
  • 1 teaspoon lemon zest
  • ½ cup cornstarch
  • 2 cups all-purpose flour

Coating

  • ½ cup powdered sugar (for coating)

Instructions

  1. Prepare the dough: In a large bowl, cream together the softened unsalted butter and ½ cup powdered sugar until smooth and fluffy. This creates a light base for your cookies.
  2. Add flavorings and dry ingredients: Stir in the cinnamon and lemon zest, mixing thoroughly. Then sift together the cornstarch and all-purpose flour, gradually adding them to the butter mixture. Combine until a soft dough forms, being careful not to overwork it.
  3. Shape the cookies: Roll the dough into small balls, about 1-inch in diameter, placing them on a baking sheet lined with parchment paper or a silicone mat, spaced evenly.
  4. Bake the cookies: Preheat your oven to 350°F (175°C). Bake the cookies for 15-18 minutes or until the edges are set but not browned. The cookies should remain pale to ensure a tender texture.
  5. Coat the cookies: Remove the cookies from the oven and let them cool slightly for about 5 minutes. While still warm, gently roll each cookie in the remaining powdered sugar until fully coated.
  6. Cool completely: Transfer the coated cookies to a wire rack to cool completely. They will firm up and develop their signature meltaway texture as they cool.

Notes

  • Ensure the butter is softened but not melted to achieve the best texture.
  • Cornstarch is key to giving these cookies their delicate, melt-in-your-mouth quality.
  • Feel free to adjust the lemon zest quantity for a stronger or milder citrus flavor.
  • Store cookies in an airtight container at room temperature for up to one week.
  • For added variation, you can sprinkle some additional cinnamon mixed with powdered sugar on top after coating.
