Layered Rainbow Jello is a colorful and visually stunning dessert made by alternating vibrant juice-based gelatin layers with creamy white gelatin layers infused with sweetened condensed milk. This fun and festive treat is perfect for parties or special occasions and combines the fruity flavors of grape, cranberry-raspberry, apple, and clementine juices with a smooth, sweet milk layer.

Ingredients

Rainbow Gelatin Layers

  • 8 cups juice, divided (2 cups juice for each layer) - 4 different juices total (grape, cranberry-raspberry, apple, clementine)
  • 14 teaspoons unflavored gelatin (3 ½ teaspoons for each layer)

White Gelatin Layers

  • 1 ½ cans sweetened condensed milk, divided
  • 7 ½ teaspoons unflavored gelatin, divided
  • Water (approximately 2 cups, divided for blooming and boiling)

Instructions

  1. Prepare Baking Dish: Use a 13x9 inch glass Pyrex baking dish or a similar sized glass dish to layer the jello.
  2. Bloom Gelatin for Juice Layer: In a large bowl, pour 1 cup of juice and sprinkle 3 ½ teaspoons of unflavored gelatin over it. Let it bloom for about 5 minutes to hydrate the gelatin.
  3. Dissolve Gelatin: Bring the other 1 cup of the same juice to a boil in a small saucepan. Pour the boiling juice over the bloomed gelatin mixture and whisk until the gelatin is completely dissolved.
  4. Pour and Chill Juice Layer: Pour the mixed juice gelatin into the prepared baking dish and refrigerate for about 30 minutes until set.
  5. Prepare White Gelatin Bloom: Mix ½ cup of water with 5 teaspoons of unflavored gelatin and let it bloom for 5 minutes.
  6. Dissolve White Gelatin: Boil 1 ¾ cups of water. Once the gelatin has bloomed, whisk it together with 1 can (14 oz) of sweetened condensed milk and the boiling water until dissolved and smooth.
  7. Pour White Layer: After the first juice layer sets (~30 minutes), carefully pour 1 ½ cups of the milk gelatin mixture over the chilled layer. Return to the refrigerator for 30 minutes.
  8. Alternate Layers: Repeat the process with the remaining juice layers and white layers, allowing each to set for 30 minutes before adding the next layer. Always let each juice mixture cool enough before pouring to prevent melting previous layers.
  9. Make Second White Gelatin Batch: When all the first white mixture is used, prepare another half batch by blooming 2 ½ teaspoons gelatin in ¼ cup water for 5 minutes. Boil ¾ cup water, then whisk the gelatin, ½ can sweetened condensed milk, and boiling water until dissolved.
  10. Final Layer and Chill: Finish layering with the second white mixture. Keep the layered rainbow jello refrigerated until ready to serve.
