  • 3/4 cup fresh ricotta cheese
  • 2 tablespoons heavy cream
  • Handful fresh basil leaves, minced
  • Pinch kosher salt

Assembly

  • 1/2 pound no-boil lasagna sheets
  • 2 cups shredded low-moisture mozzarella cheese

Instructions

  1. Make the Sauce: Heat the olive oil in a Dutch oven or medium pot over medium heat until hot. Add the ground beef and break it up with a spoon into small pieces. Meanwhile, in a food processor, pulse the onion, carrots, celery, and garlic cloves until finely minced. When the beef is mostly browned, add the minced vegetables and cook with the beef until the vegetables are translucent, about 2 to 3 minutes.
  2. Season and Add Tomato Paste: Stir in oregano, crushed red pepper, and about 1 teaspoon kosher salt. Mix in the tomato paste thoroughly with the meat and vegetables, allowing it to caramelize slightly for depth of flavor.
  3. Add Tomatoes and Water: Pour in the crushed tomatoes. Rinse the empty tomato can with about 3/4 cup water, swishing it around to pick up the remaining tomatoes, and add this to the pot as well.
  4. Simmer the Sauce: Bring the sauce to a simmer, then immediately reduce heat to low. Cover the pot and let the sauce gently simmer and meld its flavors for approximately 1 1/2 hours, stirring occasionally to prevent sticking.
  5. Finish the Sauce: Remove the lid and taste the sauce, adjusting salt as needed. Stir in the heavy cream and finely grated Parmesan-Reggiano cheese. Set the sauce aside to cool slightly before assembling the lasagna.
  6. Prepare Ricotta Mixture: In a small bowl, combine the ricotta cheese, 2 tablespoons heavy cream, minced fresh basil, and a pinch of kosher salt. Mix well to make a creamy filling.
  7. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  8. Assemble the Lasagna: Using an 8 x 5-inch loaf pan, place two no-boil lasagna sheets on the bottom, slightly overlapping. Spread a thin layer of the ricotta mixture over the pasta, then add a generous layer of the bolognese sauce followed by a handful of shredded mozzarella cheese. Repeat these layers until you reach the top of the pan, finishing with a final layer of pasta, some sauce, and a generous amount of mozzarella cheese. Cover the pan with aluminum foil.
