Korean Marinated Eggs, also known as Mayak Gyeran, are flavorful soft or hard boiled eggs soaked in a savory, sweet, and slightly spicy soy-based marinade. This quick and easy recipe enhances the eggs with garlic, chili, green onion, and sesame seeds, making them a perfect side dish or snack, especially paired with warm rice.

Ingredients

Eggs

  • 6 Eggs (room temperature)
  • 1 tsp Salt
  • 1 tbsp Vinegar

Marinade Sauce

  • ½ cup Soy Sauce
  • ½ cup Water
  • ¼ cup Honey
  • 3 cloves Garlic (minced)
  • 1 Korean Green Pepper (chopped)
  • 1 Red Chili (chopped)
  • 1 Green Onion (sliced)
  • 1 tbsp Sesame Seeds

Instructions

  1. Boil the Eggs: In a pot, bring enough water to cover the eggs to a boil. Add salt and vinegar into the water. Once boiling, carefully add the eggs and boil for 6 minutes for soft-boiled or 10 minutes for hard-boiled eggs.
  2. Cool the Eggs: While the eggs are boiling, prepare an ice water bath. Immediately transfer the boiled eggs into the ice bath to stop the cooking process and let them cool for 10 minutes.
  3. Prepare the Marinade: In a mixing bowl, combine soy sauce, water, and honey. Stir until the honey fully dissolves. Add the minced garlic, chopped Korean green pepper, chopped red chili, sliced green onion, and sesame seeds to the mixture and stir well.
  4. Marinate the Eggs: Gently peel the cooled eggs and place them in a jar or airtight container. Pour the marinade over the eggs ensuring they are fully submerged. Cover tightly and refrigerate for at least 6 hours or preferably overnight to allow flavors to infuse.
  5. Serve: Serve the marinated eggs chilled or at room temperature alongside warm cooked rice. Optionally, drizzle with a little sesame oil before serving for added aroma and flavor. Enjoy this delicious Korean snack!
