Ingredients

Graham Cracker Crust

Key Lime Pie Filling

  • 2 (14 oz) cans sweetened condensed milk
  • 6 large egg yolks
  • ¾ cup key lime juice (regular lime juice can be used)
  • 1 tbsp key lime zest (optional, but recommended for extra flavor)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease or line a 9x13 inch baking pan with parchment paper for easy removal of the bars.
  2. Make the Graham Cracker Crust: In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and stir until the mixture is evenly moistened and resembles wet sand. Press this mixture firmly into the bottom of the prepared pan, creating an even layer. Bake the crust for about 8-10 minutes until it is lightly golden and set. Remove from the oven and let it cool slightly.
  3. Prepare the Key Lime Filling: In a separate bowl, whisk together the sweetened condensed milk and egg yolks until well combined and smooth. Add the key lime juice and the optional zest, stirring just until incorporated. The mixture will begin to thicken slightly.
  4. Bake the Bars: Pour the filling evenly over the cooled graham cracker crust. Bake the entire pan for 15-18 minutes, or until the filling is just set and slightly firm to the touch. Avoid overbaking to maintain a creamy texture.
  5. Cool and Chill: Remove the pan from the oven and let it cool to room temperature. Then refrigerate the bars for at least 3 hours, preferably overnight, to allow the filling to fully firm up and the flavors to meld.
