This Keto Lemon Bread is a moist and tangy low-carb treat, perfect for those on a ketogenic or sugar-free diet. Made with almond flour and natural sweeteners, it's a delightful way to enjoy a lemon-flavored bread that's both soft and flavorful, ideal for breakfast, snacks, or desserts.

Ingredients

Dry Ingredients

  • 2 cups almond flour
  • 1/3 cup granulated sweetener (sugar-free, such as Lakanto)
  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 2/3 cup plain yogurt or coconut cream
  • 1/4 cup lemon juice
  • 3 eggs or flax eggs
  • 1 tbsp lemon zest

Instructions

  1. Prepare the Pan and Oven: Grease a 9x5 inch loaf pan or line it with parchment paper. Preheat the oven to 325°F to ensure it reaches the correct temperature for baking the bread evenly.
  2. Mix Ingredients: In a large bowl, stir together all dry ingredients, then add the wet ingredients including yogurt or coconut cream, lemon juice, eggs (or flax eggs), and lemon zest. Mix until the batter is smooth without lumps, ensuring even texture and flavor.
  3. Bake the Bread: Pour the batter into the prepared loaf pan and bake in the preheated oven for approximately 50 minutes. The bread should be cooked through but remain moist inside. Check doneness by inserting a toothpick, which should come out clean or with a few moist crumbs.
  4. Cool Properly: Once baked, allow the lemon bread to cool completely in the pan. To remove the loaf without breaking it, run a knife gently around the edges before popping it out. Cooling fully is essential as the bread is very moist and soft.
  5. Store the Bread: The keto lemon bread can be loosely covered and stored at room temperature overnight. For longer freshness, refrigerate leftovers for up to 5 days or slice and freeze for up to 2 months, allowing convenient servings anytime.

Notes

  • Use lemon zest for maximum lemon flavor—it greatly enhances the bread’s citrus aroma and taste.
  • Flax eggs can be used as a vegan substitute by mixing 1 tbsp flaxseed meal with 3 tbsp water per egg.
  • Letting the bread cool fully before slicing prevents crumbling and helps maintain its moist texture.
  • Almond flour bread tends to be delicate; handle gently when removing from pan.
  • Storage in the fridge or freezer helps extend shelf life and retain freshness without compromising texture.
