Instructions

  1. Shape Patties: Divide the ground chuck into four equal portions of 5 ounces each. Gently form each portion into a patty slightly larger than your buns, about ½-inch thick. Press an indentation around the edge to prevent puffing up during cooking. Place patties on a plate.
  2. Season Patties: Generously season both sides of each patty with kosher salt and freshly ground black pepper.
  3. Prepare Grill: Light charcoal in a grill chimney. Once the coals are covered with gray-white ash, spread them evenly over half the bottom grate. Replace the cooking grate, cover the grill, and preheat for 5 minutes. Clean and oil the grate after heating.
  4. Grill Burgers: Place the patties over the hot coals on the grill. Close the lid and open the vents for proper airflow. Cook the burgers, flipping often to ensure even cooking, until the internal temperature reaches 145°F.
  5. Melt Cheese: Move burgers to the cooler side of the grill. Place a slice of cheese onto each patty and cover the grill until the cheese melts and the internal temperature reaches 155°F. Remove from grill and cover with foil to keep warm.
