Ingredients

Grains

  • ⅓ cup red onion, chopped

Legumes & Nuts

  • ½ cup roasted and salted pistachios, chopped
  • 1 (15 ounce) can chickpeas, drained and rinsed

Dressing

  • 4-5 tablespoons freshly squeezed lemon juice
  • ¼ cup extra virgin olive oil
  • Sea salt, to taste
  • Ground pepper, to taste

Cheese

  • ½ cup crumbled feta cheese

Instructions

  1. Cook the Grain: Cook quinoa or bulgur wheat according to package instructions until tender. Once cooked, drain any excess water if necessary and let it cool slightly.
  2. Prepare Salad Ingredients: In a large bowl, combine the chopped cucumber, parsley, mint, red onion, chopped roasted pistachios, and chickpeas which have been rinsed, dried, and any loose skins removed.
  3. Make the Dressing: In a small bowl or mason jar, whisk together the freshly squeezed lemon juice, extra virgin olive oil, sea salt, and ground pepper until well emulsified.
  4. Assemble the Salad: Add the cooked and slightly cooled grain to the salad ingredients, drizzle generously with the prepared dressing, and toss thoroughly to combine all flavors.
