Instructions

  1. Bake the Sweet Potatoes: Wrap the Japanese sweet potatoes in baking paper followed by aluminum foil. Preheat the oven to 355°F (180°C) and bake the wrapped sweet potatoes for about one hour, or until they are soft and easily pierced with a fork.
  2. Prepare the Sweet Potato Shells: Remove the baked sweet potatoes from the oven. Place them on a plate and carefully cut an oval shape into the top of each potato. Scoop out a small portion of the sweet potato flesh and mash it with a fork to create a smooth base to mix with the custard later.
