Coating

  • ½ cup tonkatsu sauce
  • ½ cup Kewpie mayo

Instructions

  1. Sauté Shallots and Make Roux: Heat butter in a large saucepan over medium heat. Add finely diced shallot and sauté until soft and fragrant, about 2 minutes. Whisk in ¼ cup flour and cook over medium-low heat, stirring frequently, until the roux is amber and aromatic, approximately 3-4 minutes.
  2. Add Dairy and Crab: Slowly add the milk in a steady stream while whisking constantly to avoid lumps. Stir in heavy cream, creme fraiche, kosher salt, and black pepper. Bring the mixture to a boil. Add the Dungeness crab meat and season to taste. Reduce heat to medium and gently simmer for 8-10 minutes, stirring frequently, until thickened.
  3. Cool the Crab Bechamel: Transfer the crab mixture to a shallow tray and allow it to cool at room temperature for 1 hour. Cover tightly with cling film and refrigerate for at least another hour until it solidifies into a thick paste.
  4. Shape Croquettes: Oil your hands and divide the chilled crab paste into 12 equal portions. Roll each portion into 2x1 inch oblong croquettes.
  5. Prepare Coating Stations: Set up three bowls—one with the remaining ¼ cup flour, one with the lightly beaten eggs, and one with panko breadcrumbs.
