This classic Italian dressing recipe is a quick and easy way to create a flavorful, tangy vinaigrette perfect for salads and marinades. The combination of red wine vinegar, Dijon mustard, herbs, and creamy mayonnaise emulsifies into a rich yet bright dressing that brings a burst of Italian-inspired taste to your dishes. Ready in just 10 minutes, it can be made ahead and chilled to enhance the flavors.

Ingredients

Dressing Ingredients

  • 1/3 cup red wine vinegar
  • 1-1/2 teaspoons Dijon-style mustard
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon granulated sugar
  • 1/2 cup olive oil
  • 2 tablespoons full-fat mayonnaise (Hellmann’s/Best Foods recommended)
  • Salt, to taste (about 1/4 to 1/2 teaspoon fine sea salt)
  • Black pepper, to taste (about 1/8 teaspoon)
  • 1/8 teaspoon red pepper flakes (optional)

Instructions

  1. Combine Ingredients: In a wide-mouth jar, add the red wine vinegar, Dijon mustard, dried oregano, Italian seasoning, granulated sugar, olive oil, mayonnaise, salt, pepper, and red pepper flakes if using.
  2. Shake to Emulsify: Secure the lid and shake the jar briskly for about a minute until the mayonnaise fully integrates and the dressing emulsifies. If you don’t have a jar, whisk all ingredients vigorously in a bowl until smooth and well blended.
  3. Taste and Adjust: Taste the dressing and adjust salt, pepper, or sugar as desired to suit your preference.
  4. Chill (Optional): For best flavor, refrigerate the dressing for at least 30 minutes or longer to allow the flavors to meld. Shake well again before serving.

Notes

  • Using Dijon-style mustard helps in emulsifying the dressing and adds a slight tang.
  • The sugar balances the acidity from the vinegar and brightens the flavors.
  • Extra virgin olive oil lends a fruity richness; choose a good quality oil for the best taste.
  • Full-fat mayonnaise ensures creaminess and helps the dressing hold together.
  • Red pepper flakes add a subtle heat if desired, but can be omitted for a milder taste.
  • Shake or whisk vigorously to achieve a stable emulsion.
