  • pounds russet potatoes, peeled and chopped

  • 2 tablespoons melted butter, divided
  • 2 to 3 tablespoons butter, for frying

Instructions

  1. Prepare the potatoes: Boil the peeled and chopped russet potatoes in salted water until they are very tender, about 15-20 minutes. Drain and return them to the pot to dry out slightly over low heat.
  2. Mash the potatoes: Mash the potatoes thoroughly until smooth, then mix in 1 tablespoon of the melted butter, kosher salt, and freshly ground black pepper to season well.
  3. Make the dough: Gradually add the flour to the mashed potatoes, stirring until a soft dough forms. You may need a little more or less flour depending on moisture but aim for a dough that is pliable and not sticky.
  4. Shape the farls: Divide the dough into two equal portions. On a floured surface, pat each portion into a round about 1/2 inch thick. Cut each round into four equal triangular pieces (farls).
  5. Cook the farls: Heat 1 to 2 tablespoons of butter in a heavy skillet or frying pan over medium heat. Fry the farls for about 4-5 minutes on each side, or until golden brown and crispy. Adjust heat as needed to avoid burning.
  6. Serve: Sprinkle with flaky salt and fresh snipped chives before serving warm.
