A quick and comforting Instant Pot Chicken Spaghetti recipe that combines tender chicken, perfectly cooked spaghetti, and a flavorful tomato-based sauce seasoned with Italian herbs and spices. Ready in just 14 minutes, this easy one-pot meal is perfect for busy weeknights and can be enriched with cream cheese and grated cheese for extra creaminess.

Ingredients

Liquid and Sauces

  • 2 cups (473ml) chicken broth
  • 14 ounces (414ml) pasta sauce

Seasonings

  • 1 ½ teaspoons Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt to taste

Main Ingredients

  • 8 ounces (200g) spaghetti, broken in half
  • ½ pound (226g) skinless boneless chicken breast, cubed

Optional Ingredients

  • 4 tablespoons cream cheese
  • 3 tablespoons grated cheese of your choice

Instructions

  1. Add ingredients to Instant Pot: Pour the chicken broth, pasta sauce, Italian seasoning, garlic powder, onion powder, and salt into the Instant Pot insert, ensuring not to mix them together.
  2. Add pasta: Spread the broken spaghetti evenly over the liquids, making sure the pasta is fully submerged to ensure even cooking.
  3. Add chicken: Scatter the cubed chicken breast on top of the spaghetti without stirring.
  4. Pressure cook: Secure the Instant Pot lid and turn the valve to sealing. Select the pressure cook or manual setting on high pressure and set the timer for 4 minutes.
  5. Release pressure: Allow a natural pressure release (NPR) for 5 minutes, then perform a quick pressure release carefully, covering the vent to avoid splattering. Once the pressure is fully released, carefully open the lid.
  6. Rest and mix: Let the spaghetti stand for 5 minutes to absorb the liquid, then mix well, separating any clumped noodles for even texture.
  7. Add cheeses (optional): If desired, quickly stir in the cream cheese and grated cheese until melted and fully incorporated for a creamier, richer dish.
  8. Finish and serve: Adjust seasonings as needed, add any preferred toppings or mix-ins, and serve immediately.

Notes

  • Breaking the spaghetti in half helps it fit better in the Instant Pot and cook evenly.
  • Do not stir the pasta and chicken before cooking to prevent pasta from sticking or clumping.
  • Use a quick pressure release carefully to avoid splattering hot liquid.
  • Adding cream cheese and grated cheese is optional but enhances the creaminess and flavor.
  • If leftovers are stored, reheat gently on the stovetop or microwave with a splash of broth to prevent drying out.
