  • 8 cups (2 quarts) low sodium chicken broth (or chicken bone broth)

  • 1 lb. boneless, skinless chicken thighs
  • 1 tsp. kosher salt
  • 2 Tbsp. white miso paste
  • 2 Tbsp. fresh lemon juice (from 1 lemon)

Instructions

  1. Prepare the Aromatics: Heat the extra-virgin olive oil in a large pot over medium heat. Add the white and pale green parts of the sliced scallions, diced celery, and diced carrot. Sauté until softened and fragrant, about 5-7 minutes.
  2. Add Spices and Aromatics: Stir in the minced fresh ginger, garlic, ground coriander, turmeric, and black pepper. Cook for another 1-2 minutes to toast the spices and release their flavors.
  3. Add Rice and Broth: Pour in the dry long-grain white rice and stir to coat it with the aromatic mixture. Then add the low sodium chicken broth, stirring to combine thoroughly.
  4. Cook Chicken: Place the boneless, skinless chicken thighs into the pot, submerging them fully in the broth. Sprinkle with kosher salt. Bring the soup to a boil, then reduce heat to a gentle simmer and cook until the chicken is fully cooked and tender, about 20-25 minutes.
