Ingredients

Chicken

  • 200 g chicken breast, cubed
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 1 tbsp honey

Vegetables

  • 450 g sweet potato, cubed
  • 1 red bell pepper, diced
  • ½ cucumber, sliced
  • ¼ red onion, finely diced
  • Salt and black pepper, to taste
  • 1 tbsp olive oil (for sweet potatoes)

Hot Honey Sauce

  • 1 cup Greek yogurt
  • 1 tsp hot paprika
  • Juice of ½ lime
  • 1 tsp garlic powder
  • 2 tbsp honey
  • 2-4 tbsp water (to adjust consistency)
  • Salt and black pepper, to taste

Garnish

  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp sesame seeds

Instructions

  1. Prepare and Air Fry Sweet Potatoes: Cut the sweet potato into small cubes and season with salt and black pepper. Drizzle with half of the olive oil and toss until evenly coated. Place the sweet potatoes in the air fryer basket and cook at 200°C (400°F) for about 20 minutes, shaking the basket halfway through to ensure even cooking, until the sweet potatoes are tender and golden brown.
  2. Cook the Chicken: Season the cubed chicken breast with paprika, garlic powder, salt, and black pepper. Heat the remaining olive oil in a skillet over medium-high heat. Add the chicken and cook until golden brown and fully cooked through, about 7-10 minutes. Toward the end of cooking, drizzle 1 tablespoon of honey over the chicken and stir to coat, allowing the honey to caramelize slightly.
  3. Prepare Vegetables: Finely dice the red onion and red bell pepper. Slice the cucumber. Set all the vegetables aside for assembling the bowl.
  4. Make the Hot Honey Sauce: In a bowl, whisk together Greek yogurt, hot paprika, lime juice, garlic powder, honey, and a few tablespoons of water until smooth and creamy. Adjust the consistency by adding more water if needed. Season with salt and black pepper to taste.
  5. Assemble the Bowls: Divide the roasted sweet potatoes evenly between two bowls. Add the cooked honey-glazed chicken, diced bell pepper, sliced cucumber, and diced red onion to each bowl.
  6. Finish and Serve: Drizzle a generous amount of the hot honey sauce over each bowl. Garnish with chopped fresh cilantro and sprinkle sesame seeds on top before serving.

Notes

  • Adjust the amount of hot paprika in the sauce to control the level of heat according to your preference.
  • If you don't have an air fryer, you can roast the sweet potatoes in the oven at 200°C (400°F) for about 25-30 minutes, tossing halfway through.
  • For a milder flavor, substitute hot paprika with smoked paprika in the sauce.
